So. It has come to this.

Presents are a thing that happens at Christmas time. I like presents the same way I like cupcakes. They’re awesome, but they’re even more awesome to give to other people.

Ok, I like to receive them, too. Especially surprise presents. At my house, we had a Kris Kringle situation going on so we’ll be exchanging presents together tomorrow. However, my housemate Julie also gave us each a beautiful glass ornament tonight. Special surprise present for the win!

I love finding the best present to give to someone. When they open it and they’re just so excited and happy to get it, they just light up. That’s the spirit of Christmas, the joy of making someone happy.

I made most of my presents this year, because I’m trying to be less materialistic, to encourage others to make things, not buy things. To be a producer, not a consumer. Unfortunately, that doesn’t happen overnight but it’s a start, and it’s so great to give something to someone that you made with your hands.

Chocolate Coconut Almond Biscuits

375 g icing sugar

65 g cocoa powder

1/2 tsp salt

85 g choc chips/chunks/dark chocolate, chopped

130 g almonds

45 g desiccated coconut

4 large egg whites

To toast almonds: turn oven on to 325°F/162°C and line a rimmed baking tray with baking paper. Lay almonds in one layer and roast for 10 minutes.

Sift together icing sugar and cocoa. Stir in salt, coconut and chocolate. Roughly chop the almonds and stir them in.

Mix in egg whites, being careful not to overmix. Drop teaspoonfuls of mixture onto the baking tray you used for the almonds, about two inches apart. Bake in preheated oven and bake for 15-18 minutes.
