raspberry muffins, a basketful

There’s something about autumn that just makes me happy. In Melbourne, you get all the cold wet miserableness of winter, plus the pretty colours and occasional sunlight of autumn. It’s May, so that means we’re definitely in the swing of cold, blustery autumn. I love it.

How did it get to be May already? I know life goes faster as you get older; something to do with the percentage of your life a year makes up. So, I’m twenty. A year is 5% of my life. When I was half my age, a year was twice as long. Time is liquid and tricksy, it messes with your head. We try to tame it, to loop it up neatly in knots of clocks and schedules, keep it in line. Time is beyond us, we are only living in it.

I’m going to do a quick review of my New Year’s resolutions, just to keep us on track. Or rather, to remind myself of where I’m trying to go this year. It’s not always so easy to remember the end goal when the present is so… whacked out.

  1. Be healthier. I started running,(again) (again again) which this time seems to be sticking. It’s been incredible for my sanity. That is to say, after I run, things make more sense. I’m calmer and more centred. I love that feeling. I still have to learn ways to balance it out, food wise. As winter approaches, it’s so easy to eat to keep warm. We’ll get there.
  2. Blog more. Uh… yeah. About that. I’ll get to the excuses later but let’s just say that it’s been a busy couple of months, and not just in my life but in my headspace. No, I haven’t been blogging more. I’d like to be, though, and hopefully it’ll happen.
  3. Get creative. I could do more in this avenue. At the moment, I’m in limbo so for me, to start a project is a bad idea, because I’m not in a stable place. That being said, when am I ever going to be in a stable place? I dress creatively (sometimes) which helps to keep that muscle in use. And at the moment, I’m planning my 21st birthday party, so that’s taking some creative thinking. I’m very excited.
  4. Find a church and mentor. Woohoo! Success! At least in part. I have a church. One I go to regularly in which we encourage each other in our faith and pray for each other and read the bible together and do faith and life together. It’s small. We meet at people’s houses and we tell each other how we’re doing. I’m a little bit in love with my church. I have whole ruminations on the whole deal, but for now let’s just say that I’m pretty happy.

Now that’s over, let them eat cake! I know Mother’s day is passed, but these muffins would be great to make for your mum on any day of the year, (especially if you happened to miss mother’s day. Not that I know of anyone who may have done this. But just something to keep in mind, you know.)

This recipe is one I borrowed from my boss, because his muffins are bestsellers. It’s true. People love them. They’re substantial (they were made to be made with a texas muffin pan, so they’re quite large) they’re fairly healthy, as muffins go – oil and wholemeal flour and fruit – and they’re value for money when placed next to half-size cupcakes at the same price. But we’re not talking about money. We’re talking about muffins.

Make them, eat them, slather them in butter and give them to your mum in bed one Sunday morning for no reason whatsoever. Just do.

Muffins your way

Adapted only slightly from the Vanilla Pod Café

5 eggs

220g sugar

220g brown sugar

280ml vegetable oil

200ml milk

200ml water

22g baking powder

480g wholemeal plain flour

About 1 cup raspberries, mashed with a fork*

Preheat oven to 180˚Celsius. Butter and flour two texas muffin tins and set aside.

Cream the eggs and sugars together on high speed for about five minutes. Mix in oil on medium speed, then milk and water on very low speed. Sift in flour and baking powder and mix just until combined.

Fill muffin tins to about ¾ full. Drop a few raspberries on each muffin, and stir in with a fork.

Bake for about 35 minutes, or until golden and puffed up. Serve warm, with butter.

These keep for a couple of days in the refrigerator, and can be eaten cold, in the car on the way home from work to keep you awake for the 2 ½ hour drive. Or warm, slathered with butter, for breakfast in bed with a cup of tea.

*Substitute mixed berries, chocolate chips and pineapple, stewed apple mixed with cinnamon and brown sugar. Or any other combination you think would be amazing, because I’m sure you would be right.

  1. These look fantabulous! Is there any chance you could put in ingredient measurements? It seems you have overlooked this – perhaps distracted by the goodness of the muffins. A novice like me is sure to fail without someone more experienced telling me how much flour and sugar and milk to put!
